Why have I never cut my meat before marinating??! Also my one regret from my last trip to LA was not fitting in Korean barbecue so this will scratch the itch!

This sounds really delicious - it sort of reminds me of Korean Bo Ssam actually where I think wrapping rice and beef in salad leaves is standard. Either way, delicious!

Yes! I just don’t have a good way to fake long-cooked pork and the rich flavor that one has without the marinade.

I know what you mean! This recipe did remind me of Alison Roman’s Tacos al Impostor (a genius recipe title if there ever was one) which also cuts a lot of steps for sth similarly delicious as the original - I am all for these sort of hacks!
