This sounds really delicious - it sort of reminds me of Korean Bo Ssam actually where I think wrapping rice and beef in salad leaves is standard. Either way, delicious!
I know what you mean! This recipe did remind me of Alison Roman’s Tacos al Impostor (a genius recipe title if there ever was one) which also cuts a lot of steps for sth similarly delicious as the original - I am all for these sort of hacks!

Yes! I just don’t have a good way to fake long-cooked pork and the rich flavor that one has without the marinade.
